Pasta with bacon

So this is an absolute classic pasta dish. I’s originally from Rome and the original perfect recipe says no onion. But I like just a little in it!! Hubby always complains.. he’s Italian..

ingredients :

Can of chopped tomatoes

Some slices of pancetta( smoked bacon), diced

A glove of garlic finely chopped

A small shallot( optional)

Salt pepper olive oil

Pasta

chop the onion garlic and put in a frying pan with a tablespoon of oil then add the chopped bacon

add the chopped tomatoes, salt pepper and if you want a teaspoon of sugar just to take away the acidity of the tomatoes.

Cook for about 40 mins on a low heat

Thursday is pizza day

Every Thursday my daughter invites her best friend for lunch and they want pizza.

So here is my foolproof recipe. Dead easy and dead quick.

Ingredients:

About 300g plain flour

A cube of fresh yeast about 15g

Salt

2 tablespoons olive oil

Some warm water

put the flour together with the yeast crumbled in , in a big bowl. Mix well with your hands so that the yeast is well rubbed in add the olive oil and some warm water, start mixing with a wooden spoon and then once it is all mixed , continue mixing and kneading with your hands, add water if you think it’s necessary.you should get a nice round ball cover with either cling film or a tea towel and put somewhere warm to rise, i make it a few hours before and it rises beautifully roll out on a floured board and put on a baking tray, cover with topping of the choice, we like, chopped tin tomatoes, and add salt pepper oregano and a dash of oil

Put in a pre heated oven at 170 degrees for about 20 mins, add mozzarella and anything else you want serve hot!

Chick pea burgers

A definite favourite here, dead quick and easy to make, and very tasty. so what we have are a carton of already cooked chick peas, drain and rinse them. I egg( yolk only) beaten, a tablespoon of mustard, and one of ketchup, a shallot diced finely, salt pepper and some flour

put everything in a bowl, all the ingredients apart from the flour, and blend with a hand processor until smooth but there are still some chick peas left whole. see, it looks a mess but I promise it will taste amazing! put some flour on a work surface and make roundish shapes like small burgers and roll in the flour until both sides are covered.

Put in the fridge until you are ready to cook.

Then in a pan, add a tiny amount of olive oil and cook in both sides until golden brown. About 2 mins each side. I like to have them with mashed cheesy potatoes or a salad!

Sunday

Sunday is definitely my cooking day. I usually do a roast but today decided on fish. Salmon to be exact. Seeing as the old man is a fisherman it’s ideal for him.

So here we go:

Ingredients

A piece of trout salmon filleted and cleaned

Lemon zest and juice

Puff pastry two rolls of it

Dill, salt and pepper

For the veggies:

Some baby carrots

A few florets of cauliflower

About three small potatoes cut into wedges

Green beans, a handful

Clove of garlic sliced

Cherry tomatoes, a handful sliced in two

A red onion cut into wedges

Spinach cooked

Grated cheese or soft cheese

Method:

Marinade the salmon with the lemon zest and juice salt and pepper and leave for an hour.

Arthur loves this bit so it has to go in the fridge!

place one of the puff pastries on a baking tray and put the fish on itcover with the other one and close it. Oh sorry forgot, before putting the other puff pastry on, cover with the spinach and cheese mix!

Meanwhile make the veggies in a roasting tin just chuck them all in, I tend to boil for a few mins the beans and cauliflower and then add them to the other veg

make a sauce of mustard, a tablespoon, salt, pepper and olive oil. Pour over the veg and mix well, you can also put it on after they’re done.

Put the salmon and the veggies in a Pre heated oven of about 160/170 for about 45 mins. The pastry should be well risen and the veg not too soft. I like to really taste the veg and like them a little hard. and here we have them.

Emily’s favourite chocolate cake

This choc cake has been in my family for years. My mum used to make it for me and now I make it for Emily my 17 year old daughter. It’s a firm favourite with my students as well. Arthur loves it lick the bowl after, he fights with Emily to see who gets there first.

It’s so easy, and quick to make.

Ingredients:

Flour 225g

Marg/butter softened 225g

Eggs 3 med size

3 tablespoons of drinking choc

2 tablespoons dark drinking choc

A small packet of baking powder

Pinch of salt

And about half a glass of milk

grease and lightly flour a loose baking tray put flour choc salt baking powder in a bowlsift it all together and leave to one side mix sugar and butter together until

Light and fluffy, use a wooden spoon add the three eggs! Beaten in one at a time to the sugar butter mixture add the dry ingredients to the egg and sugar mix and some milk and mix until it is light and like a chocolate mousse

Note: a good time to lick the spoon….

pour into the baking tray and put in a pre heated oven for about 40 mins, at 160 degrees.

Stick a toothpick in the middle of the cake , if it comes out clean then it’s done.

Leave to cool in the tin.

Do the washing up.

Make a cup of tea or coffee and then have a massive slice !

Turkey and veg pie

Today Arthur and I thought about our fav food. And we came up with Turkey, well it is January, and vegetables all mixed in together .

So today we are suggesting a turkey and veg pie.

Ingredients:

Turkey breasts cut into cubes

Potatoes cubed, 2/3

Carrots 2 chopped roughly

Stick of celery 1 sliced

Onion, 1 chopped into quarters

Lemon zest and juice

Flour about 45 grams

Chicken stock about a pint

2 rolls of bought made puff pastry ( thanks Louise)

So here we go:

In a pan grate the lemon zest and put in and add the onion add the vegetables and stock and turkey . Leave to boil for about 30 minonce the turkey is cooked take out the veg and put in a separate bowl to the turkey.

Leave to cool. Arthur is keeping an eye on things

make a sauce of the stock left over( you might have to add a bit more water), add lemon juice salt flour and pepper. Keep whisking until the sauce thickens add the veg and the chicken to the dice and leave to cool meanwhile..Arthur is thinking about doing the washing up I’ve used 2 rolls of puff pastry shop bought is fine put the turkey and veg in an oven proof dishcover with the pastry and make some decorations if you want , cover with a beaten egg

Bake in the oven for about 30 mins on 160 degrees. Serve hot.

Might be nice a good mash potatoes or just a fresh salad.

Pea and Speck soup

And here we are with our first recipe. Taken from Mary Berry’s cookbook. I’ve slightly changed it by adding some smoked speck to it. and here we have Arthur. Getting ready to start.

So you will need a deep saucepan , a small frying pan, some chicken stock already boiled.

Ingredients are:

Frozen peas

A small handful of smoked speck gently fried and cut up into small pieces

A small onion chopped

Parsley

Salt and pepper

Butter, about a diceful ( not a lot basically)

fry the speck, not oil or butter is needed, for about 2 mins and leave to cool

then fry the onions until soft, add a tablespoon of flour and half a teaspoon of sugar( brown or white) cook for a minute

add the frozen peas, parsley and chicken stock and leave to boil, then simmer for about 5 mins .

Meanwhile play with the cat….

once cooked, with a food processor blend the soup well.

Salt and pepper to taste and add the speck.

while I cook.. Arthur had found the perfect resting place.
